Recipe: Bacon Wrapped Avocado Beef Bombs

Bacon wrapped avocado beef bombs are really filling and a go-to when its avocado season!  FYI, it is always bacon season at my house so it would be pointless to gauge seasons by those slices of heaven!

I often eat one meal a day (OMAD) and this is a perfect selection.  Each nugget o’ goodness packs a whopping 60-ish grams of protein and 65 or so grams of yummy healing fats while contributing about 3 grams of carbohydrates.  NOTE:  I am not giving concrete numbers for the macronutrients since they may vary.  These are decent ballpark numbers.  

I get my ground beef delivered from my faves (and #MyFarmerCrush) up at White Oak Pastures.  I opt for bacon that isn’t chemicalized to death from my local grocers.  WOP has bacon, but it is in such high demand they’re often sold out!  If they have it available next time I order, I just may buy them out.

Back to the bacon wrapped avocado beef bombs…

They’re easy to make. Opt for smaller avocados that are still firm so they don’t disintegrate as you’re wrapping the beef around them.  Avocados have a rough & tough exterior therefore it’s not all that necessary to purchase the organic varieties.  Save that cash for the proteins herein.

After you assemble the bombs, you’ll bake in preheated 375°F oven for 30 mins to start.  You’ll want to ensure the beef is cooked all the way through, so using a meat thermometer is a good idea.   Aim for 130-135°F for medium rare. Check the bacon for the preferred amount of crispiness.  Personally, I like my ground beef a little on the rarer side, especially when eating good quality grass fed beef…so I gauge the doneness by the crispiness of the bacon.  I’m in Camp Crispy, how about you?

Here’s my process for making this nugget o’ goodness:  

Ingredients: 

  • 1 pound of ground beef, grass fed/finished if available 
  • salt and pepper to season the ground beef
  • 2 small avocados
  • 2 one-inch cubes soft cheese of your choice, I like to use brie
  • 4 slices bacon (raw and sliced thin)

Yields 2 servings as a main and 4 as a side.

I like to eat my bacon wrapped avocado beef bomb with asparagus (my favorite veg).  I’ll use the drippings from the bombs as my cooking fat for the asparagus.  It is a mortal sin to waste good healing fats as far as I’m concerned, so I don’t ever do that!
